Distinguished Chef Bruno Menard boasts an impressive career defined by his dedication to culinary excellence.

Prior to founding Bocuse d’Or Singapore in 2015, Bruno spent 35 years at some of the world’s finest restaurants, including L’Osier in Tokyo, which he led to 3 Michelin stars.

Notably, he has played pivotal roles in chef training and mentorship, guiding aspiring talents to success through his involvement in prestigious competitions like Bocuse d’Or.

A culinary luminary, Chef Julien Royer is the Co-Owner of Odette, which has proudly held three Michelin stars since 2019.

With an impressive array of credentials, Julien has been instrumental in guiding Odette to consistent recognition on The World’s and Asia’s 50 Best Restaurants lists. In addition to his role at Odette, he oversees Claudine, a French neo-brasserie in Singapore, and founded Louise, a Michelin-starred restaurant in Hong Kong.

Through his restaurants, Julien has provided many aspiring chefs with invaluable platforms to hone their skills, emphasising mentorship and talent development.

One of the leading lights of haute French cuisine, Sebastien Lepinoy is the culinary mastermind behind Three Michelin-starred restaurant Les Amis.

Frequently hailed as the custodian of French culinary arts in Asia, is passionate about preserving and imparting the essence of French gastronomy to aspiring cooks and chefs. He ardently endeavors to foster and guide talent within the hospitality realm. As a result of his mentorship, numerous proteges have successfully established their careers with prestigious culinary establishments around the world.

Dubbed the ‘Godfather’ of Singapore’s F&B scene, Otto Weibel, continues to inspire with his unwavering passion and vitality.

Originating from Switzerland, he has left an indelible mark on the culinary scene, notably as the former Director of Kitchens at Fairmont Singapore and Swissotel Singapore.

With a distinguished career spanning decades and as the former President of Bocuse d’or Singapore and Asia Pacific, Otto has garnered numerous accolades and remains dedicated to mentoring the next generation of culinary talent.

Eric Teo is a prominent figure on the local culinary scene, having held key F&B positions with several notable hotels in Singapore.

Throughout his illustrious career, Eric has led his competition teams to win medals at several international culinary challenges, demonstrating his strong commitment to mentoring aspiring talents within the industry. As the first Singaporean to be appointed as President of the Singapore Chefs’ Association from 2005 – 2013 and President of Bocuse d’Or Academy Singapore in 2017 and 2021, he continues to inspire and shape the next generation of chefs with his wealth of knowledge and experience.

One of the pioneers of French fine dining in Singapore, Emmanuel Stroobant is the Chef-Owner of Saint Pierre, a Two Michelin-starred establishment known for French cuisine with an Asian accent.

Under his leadership, Saint Pierre has been inducted into the prestigious Les Grandes Tables du Monde and is ranked on La Liste’s Top 1000 Restaurants 2024. Emmanuel is also the Chef-Owner of Two Michelin-starred Shoukouwa, a fine dining sushiya. To nurture a new generation of future-ready Singapore chefs, he helped launch the Singapore Delegation of Disciples Escoffier International Association and is also the Head Judge of the Young Talents Escoffier Competition.

Renowned for his innovative approach to modern British cuisine, Kirk Westaway leads as Executive Chef at JAAN by Kirk Westaway, a Two Michelin-starred restaurant in Singapore.

His culinary creations reflect a deep reverence for nature and seasonality, meticulously crafted with the finest ingredients. With numerous achievements, including accolades from La Liste and Les Grandes Tables du Monde, Kirk continues to inspire aspiring chefs with his dedication to the craft.

Renowned for his innovative gastronomy, Christophe Lerouy combines French culinary tradition with contemporary flair.

With experience in Michelin-starred establishments across Europe and Asia, Christophe’s tenure at Alma by Juan Amador in Singapore earned the restaurant its first Michelin star within a year. As Chef-Patron of Lerouy, a One Michelin-starred establishment, Christophe continues to delight diners with his seasonal menus using produce from the best artisan providores.

Reputed for his exceptional expertise in Italian cuisine, Beppe de Vito is a highly esteemed culinary figure.

With a career spanning decades, he has garnered widespread acclaim for his innovative approach and unwavering dedication to quality. As the founder of ilLido Group and Chef-Owner of One Michelin-starred restaurants like Braci and Art di Daniele Sperindio, Bepped has cemented his reputation as a leader in the culinary world. His commitment to chef training is evident through his mentorship programs and culinary collaborations.

Known fondly as the ‘Vegetable Whisperer’, Jeremy Gillon is the Chef-Owner of One Michelin-starred establishment, Restaurant JAG.

Prior to relocating to Singapore, he helmed restaurant L’Epicurien in Le Montana hotel in Val Thorens in the French Alps, and led the restaurant to receive a Michelin star in 2015. With a strong background in French culinary traditions, Jeremy infuses innovation into his dishes, showcasing seasonal and sustainably sourced ingredients with great flair.

Zave is a seasoned culinary professional with extensive experience in education and management.

Currently serving as the Section Head of the Institute of Technical Education, Zave is committed to nurturing the next generation of culinary talents. Additionally, he serves as the designated kitchen expert for the Singapore selection of Bocuse d’Or Singapore.

Jimmy Chok is a seasoned culinary professional with years of experience, earning accolades for his mastery of diverse cuisines and creative culinary techniques.

Having represented Singapore on the international culinary stage, including the Bocuse d’Or Singapore competition, he passionately shares his knowledge with aspiring chefs.. As a judge in a cooking competition featuring Singapore candidate Mathew Leong, Jimmy played a pivotal role in igniting Mathew’s passion for the culinary arts.

With over 20 years of experience as a chef and culinary consultant, Jimmy Chok is a well-known figure in Singapore’s F&B scene.

As a judge during Chef Mathew Leong’s formative years, Jimmy recognised his potential and invited him to spend a day at his restaurant. Since then, Jimmy has been Mathew’s steadfast supporter, watching him grow as a chef. Now, as Chef-Mentor, Jimmy is once again supporting Mathew on his journey to the Bocuse d’Or Grand Final in Lyon.

With 15 years of experience preparing students for successful culinary careers, Toh Chia Wee Zave, Assistant Director, Hospitality Culinary Skills, Institute of Technical Education, transitioned from the restaurant scene, where he worked with Les Amis Group, to training future-ready chefs. He enjoys the shift from the fast-paced world of F&B hospitality to nurturing young talents, helping them grow into confident professionals. As Chef-Mentor for Bocuse d'Or Singapore, he continues to champion local chefs on the international  stage, sharing his experience and resources with the next generation. 🍽️✨

Meet Chef Synva Knapstad Gjerde @synvagjerde from Voss, Norway 🇳🇴. Synva's journey with Bocuse d'Or began with the Norwegian national team when she won first place in the championship for apprentice chefs.

She now takes on the role of a commis, as part of Team Singapore’s participation in the Asia-Pacific selection and Grand Final. 🇸🇬As Chef Mathew’s indispensable partner for this competition, she has been training closely with him, dedicating many hours at every available training session.

Chef Mathew Leong found himself facing a unique challenge for the Bocuse d’Or Grand Final in 2021. Participants were required to craft a takeaway box, in light of the Covid-19 pandemic, and to create a multi-course meal using tomatoes as an ingredient.  tomatoes. He spent four months conceptualising the dishes and a reusable box inspired by Singapore Botanic Gardens. Check out this Trilogy of Tomato, featuring XO Prawn with Confit Tomato & Cauliflower Flan, and a Texture of Tomato.
